Chef Pierre Hermé teams Up With Bakery For Premium Pastries

Renowned pastry chef Pierre Hermé has teamed up with French bakery Bridor to launch a collection of premium Viennese pastries.

British Baker reports that Bridor says the five-strong collection takes inspiration from traditional and artisanal baking methods and has taken special attention to the sourcing and selection of the ingredients for the range, which is called Bridor x Pierre Hermé Paris.

The bakers say that the vitamin C needed for the elasticity of dough and usually used in synthetic form has been replaced with vitamin C from the acerola fruit, which is native to South America.

Meanwhile, the puff pastry is made with Breton butter, and the products are enriched in sugar and whole milk, which is used in powdered form, which Bridor claims enhance the taste and texture.

 

The five new pastries are:

Almond & Pistachio Stuffed Croissant. The bitter almond paste enhances the flavour of the pistachio, the bakers say.

Almond & Lemon Croissant. The filling contains Sicilian lemon juice.

Ceylon Cinnamon & Apple Triangle. French apples are used for flavour, and the cinnamon adds a ‘delicate and lightly floral flavour’.

Pain au Chocolat. Selected for its strong cocoa taste and tangy notes, the filling is made from Madagascan pure origin chocolate.

Croissant. Described as having a buttery and sweet flavour.

 

“We are very proud of this collaboration,” said Bridor CEO Philippe Morin. “This collection brings together the best of both worlds and perfectly embodies our ambition, which is to give access to high-quality products to as many people as possible, in every country and on every table.”

Bridor, which was established in 1988 and has more than 2,500 employees worldwide, has rolled out several new products over the past year including high-fibre bread and cinnamon swirls.
